🥬 Italian Purple Cabbage Rolls Recipe

Serves: 4 | Prep Time: 25 mins | Cook Time: 40 mins

Ingredients

  • 1 medium purple cabbage (about 10–12 leaves)

  • 2 tbsp olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 250g (½ lb) ground beef or Italian sausage (optional: use lentils for vegetarian)

  • 1 cup cooked rice or quinoa

  • 1 tsp dried oregano

  • 1 tsp Italian seasoning

  • ½ cup grated Parmesan cheese

  • 1 ½ cups tomato sauce or marinara

  • Salt and black pepper to taste

  • Fresh basil or parsley for garnish

Instructions

  1. Prepare Cabbage Leaves:
Bring a large pot of salted water to boil. Gently separate 10–12 cabbage leaves and blanch for 2–3 minutes until soft. Drain and pat dry.

  2. Cook Filling:
Heat olive oil in a pan. Sauté onion and garlic until fragrant. Add ground meat and cook until browned. Stir in rice, oregano, and seasoning. Remove from heat and mix in Parmesan cheese.

  3. Assemble Rolls:
Place 2–3 tablespoons of filling on each cabbage leaf. Roll tightly, folding in the sides.

  4. Bake:
Spread half of the tomato sauce on the bottom of a baking dish. Arrange cabbage rolls seam-side down. Top with the rest of the sauce. Cover with foil and bake at 180°C (350°F) for 30–35 minutes.

  5. Serve:
Garnish with fresh basil and a drizzle of olive oil. Serve warm with crusty bread or a side salad.

💡 Tips:

  • Add mozzarella before baking for a cheesy version.

  • Try vegetarian fillings like ricotta and spinach or lentils and mushrooms.
