Italian Purple Cabbage
🥬 Italian Purple Cabbage Rolls Recipe

Ingredients

1 medium purple cabbage (about 10–12 leaves)

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

250g (½ lb) ground beef or Italian sausage (optional: use lentils for vegetarian)

1 cup cooked rice or quinoa

1 tsp dried oregano
-
1 tsp Italian seasoning
-
½ cup grated Parmesan cheese
-
1 ½ cups tomato sauce or marinara

Salt and black pepper to taste

Fresh basil or parsley for garnish
Instructions

Prepare Cabbage Leaves:
Bring a large pot of salted water to boil. Gently separate 10–12 cabbage leaves and blanch for 2–3 minutes until soft. Drain and pat dry. -
Cook Filling:
Heat olive oil in a pan. Sauté onion and garlic until fragrant. Add ground meat and cook until browned. Stir in rice, oregano, and seasoning. Remove from heat and mix in Parmesan cheese. -
Assemble Rolls:
Place 2–3 tablespoons of filling on each cabbage leaf. Roll tightly, folding in the sides. -
Bake:
Spread half of the tomato sauce on the bottom of a baking dish. Arrange cabbage rolls seam-side down. Top with the rest of the sauce. Cover with foil and bake at 180°C (350°F) for 30–35 minutes. -
Serve:
Garnish with fresh basil and a drizzle of olive oil. Serve warm with crusty bread or a side salad.
