This vegan garlic soup is a true treat for garlic lovers! Three whole bulbs of garlic are roasted in the oven, providing an intense yet mildly sweet flavor. Combined with potatoes, onions, and plant-based cream, the soup is wonderfully creamy.

Ingredients (for 4 servings):
• 3 whole bulbs of garlic (approx. 30–35 cloves)
• 2 onions, diced
• 3 tablespoons olive oil
• 3 potatoes (approx. 400 g (14 oz)), diced
• 1.2 l vegetable broth (5 cups)
• 200 ml plant-based cream (¾ cup, e.g. soy or oat)
• 1 tsp thyme
• 1 tsp rosemary
• Salt, pepper
• some lemon juice
