Cheesy Baked Eggplant
🧾 INGREDIENTSFor the cheesy baked eggplant:
• 1 eggplant (400–500 g / about 1 large)
• 1 tbsp salt (to draw out bitterness) + ½ tsp
• 3 garlic cloves + 1 more for the topping
• 1 bunch parsley
• 1 bunch dill
• ½ tsp smoked paprika
• ½ tsp dried basil
• 1 tsp oregano
• Black pepper
• 1 tsp vegetable oil
• 1 tomato
• 70 g cheese (about ⅔ cup shredded)
• 1 tsp breadcrumbs
• 1 tsp liquid honey
For the garlic yogurt dip:
• 2 tbsp Greek yogurt
• 1 garlic clove
• Salt
• A few drops of lemon juice
