Start by slicing eggplants lengthwise into thin strips, sprinkle with salt, and let them sit for 20 minutes to draw out moisture. Pat dry, brush with olive oil, and bake at 200°C (400°F) until tender.


For the filling, mix ricotta cheese, grated Parmesan, minced garlic, fresh basil, and a pinch of salt and pepper. Spread the mixture onto each baked eggplant slice, roll them up, and place in a baking dish with marinara sauce. Top generously with mozzarella.
