If you want to make Carbonara just like in Italy, this easy and delicious recipe is for you! Start by cooking 200g of spaghetti in salted boiling water until al dente. Meanwhile, in a bowl, whisk together 2 eggs, ½ cup grated Parmesan cheese, salt, and plenty of black pepper. In a hot pan, sauté 100g diced pancetta or bacon until crispy. Once the pasta is cooked, reserve a little pasta water, then drain the rest. Add the pasta directly to the pan with the pancetta, tossing well to coat in the rendered fat.
Remove from heat and pour in the egg mixture, stirring quickly so the sauce becomes creamy but not scrambled. If needed, add a splash of pasta water for perfect silkiness. Top with extra Parmesan and pepper. A classic Italian Carbonara ready in minutes—simple, authentic, and full of flavor!
