Ingredients:
Red lentils (for that signature thickness and creaminess)
Pasta and vegetables for extra heartiness
Aromatic spice mix (cumin, turmeric, coriander)

300 g red lentils
330 g tomatoes
125 ml tomato purée (about 1/2 cup)
1 onion
2 tbsp garlic finely chopped
1 zucchini (about 12 oz / 350 g)
250 g lasagna sheets or pasta (about 9 oz)
3 tbsp cooking oil
1 1/2 tsp salt (to taste)
1 1/4 tsp turmeric
1/2 tsp cumin seeds
1/2 tsp chili flakes
2 tbsp ground coriander
Cayenne pepper (optional to taste)
about 8 cups water
1 bunch parsley or cilantro
