How to make simple tomato noodles at home?
Fresh tomatoes, eggs, and a rich, flavorful sauce come together so well.
An easy, comforting dish you’ll want to make again and again.

📝 Ingredients
 • 3 tomatoes
 • 3 eggs
 • 5 cloves garlic (adjust to taste)
 • A little parsley (or green onions)
 • 220g dried noodles (or pasta)


🍳 Instructions
 1. Heat oil in a pan over medium heat. Add the eggs and cook until just set. Remove and set aside.
 2. Add a little more oil, then sauté the garlic until fragrant.
 3. Add the diced tomatoes and cook until they release their juices.
 4. Add 1–2 tbsp tomato paste, 2 tsp light soy sauce, 1/4 tsp sugar, 1/8 tsp salt, and 1/4 tsp white pepper. Mix well.
 5. Add the larger tomato chunks and stir to combine. If the noodles aren’t ready yet, turn off the heat and wait.
 6. Turn to low heat. Add the cooked noodles (about 70–80% done, 2–3 minutes less than package instructions) and toss well.
 7. Add the eggs and mix everything together.
 8. Finish with chopped parsley. Add a little black pepper before serving, if you like.
