Chicken Roulades

📋 INGREDIENTS:
For the chicken roulades:
• 2 large (approx. 200 g / 7 oz each) chicken breast fillets
• 4 slices of Parma ham or Serrano ham
• 80g (2 ¾ oz / about 3 cups) baby spinach
• 100g (3 ½ oz / 1 cup) Gruyère or mozzarella, grated
• Salt & freshly ground pepper
• 1 tsp Dijon mustard
• 1 tsp olive oil (5ml / 1 tsp)
• 1 tsp butter (5g / 1 tsp)
For the white wine sauce:
• 100ml (⅓ cup) dry white wine
• 100ml (⅓ cup) heavy cream
• 1 small shallot, finely chopped
• 1 tsp butter
• 1 tsp flour
• Salt & pepper
For the rosemary potatoes:
• 400g (14 oz / about 3 cups) small potatoes
• 2 tbsp olive oil
• 1 tsp fresh rosemary
• Salt & pepper
